History of Taiwan Tieguanyin

Tieguanyin is a tea variety that has been documented since the 1700s. The Tieguanyin in Taiwan was first brought by immigrants from Anxi in Fujian, making it one of the oldest varieties introduced from mainland China to Taiwan.

Status
  • It is one of the traditional four classic oolong teas: Wuyi Rock Tea, Guangdong Phoenix Dan Cong, Anxi Tieguanyin, and Dong Ding Oolong. Traditional Tieguanyin tea has a fermentation level of 40-50%.
  • The Muzha Tieguanyin introduced to Taiwan has a fermentation level of about 20%, which belongs to a lighter, more fragrant roasted oolong.
  • Our tea farm produces a style that is closer to the traditional high fermentation level.

 

Preparation Method

The traditional preparation method for Tieguanyin oolong tea includes picking, sun withering, multiple rounds of shaking, fermentation, pan-frying, hot rolling, initial rolling, re-roasting, re-rolling, and drying.
Heavy withering, heavy fermentation, depending on purpose and preference, with medium/heavy roasting.

 

Characteristics

The notable classic characteristics are a rich flavor with a sweet throat feel, lasting aftertaste, and a fruity aroma with a hint of iron due to high fermentation.
